Buying and Handling Mushrooms
The following information applies to all fresh mushrooms, except as otherwise described on the product pages.
Buying Mushrooms
Look for smooth, firm caps, free from major blemishes. The surface
should be dry (but not dried) and never slick. Some peat moss on the
mushroom or in the package is acceptable. Freshly picked white mushrooms
have closed veils (meaning the membrane on the underside of the cap is
tightly attached to the stem and the cap) and a delicate flavor. If the
membrane has pulled away, the mushroom has lost some moisture,
actually giving it a somewhat richer flavor. Many people prefer open-veiled mushrooms for cooking.
Packaging
White mushrooms are offered in several package sizes, ranging from
6 to 40 ounces and in bulk (loose). You will also find them sliced.
Specialty mushrooms come in packages ranging from three to six ounces, or more,
depending on the variety. They are also available in bulk.

Storing Mushrooms
Refrigerate immediately. Fresh mushrooms should be used as
soon as possible. If packaged, to prolong storage, remove the outer plastic
wrap and cover with a paper towel. If purchased in bulk, for best results,
place the mushrooms in a paper bag to reduce moisture accumulation. Never store them in a plastic bag!
Preparing Mushrooms
To clean, remove any clinging particles with a damp cloth or a soft
brush. Or, place mushrooms in a colander or strainer and rinse them quickly;
immediately pat them dry with a paper towel. Never soak them because mushrooms are
porous and will absorb water. Trim the stem ends only if they are dry.
