Pleasingly mild and woodsy when eaten raw; the distinctive flavor
intensifies when cooked. Mature Agaricus (identified by open veils and
darkened caps) develop a richer, deeper taste.

Storage and Handling:

Upon arriving home, refrigerate immediately. Fresh mushrooms should be used
as soon as possible.
If packaged, to prolong storage, remove outer plastic wrap and cover with
a paper towel. If purchased in bulk, for best results, place in a paper
bag to reduce moisture absorption.
