Pleasingly mild and woodsy when eaten raw; the distinctive flavor intensifies when cooked. Mature Agaricus (identified by open veils and darkened caps) develop a richer, deeper taste.
Storage and Handling:
Upon arriving home, refrigerate immediately. Fresh mushrooms should be used as soon as possible.

If packaged, to prolong storage, remove outer plastic wrap and cover with a paper towel. If purchased in bulk, for best results, place in a paper bag to reduce moisture absorption.
Suggested Usage:
The most versatile of all mushroom varieties; suitable for either fresh or cooked applications. Use raw with dips or in a salad. Sauté, braise, or grill to serve as a side dish or to enrich sauces, soups, stuffing, and entrées.
